10-Minute Sausage Skillet with Cherry Tomatoes and Broccolini

This vibrant sausage and broccolini pan-fry is the ultimate solution for a nutritious midweek meal when time is short. By combining succulent Italian-style sausages with sweet cherry tomatoes and earthy tenderstem broccoli, you create a dish that is bursting with colour and fresh Mediterranean flavours. The tomatoes break down slightly during cooking to form a light, savoury sauce that coats the crisp vegetables perfectly.

As a diabetes-friendly recipe, this dish focuses on lean protein and high-fibre greens, making it a balanced choice for a healthy lifestyle. It is naturally lower in carbohydrates than traditional pasta dishes, though you can serve it with a small piece of wholegrain crusty bread to soak up the juices. Simple, quick and wholesome, it is a reliable favourite for busy households.

How to make 10-Minute Sausage Skillet with Cherry Tomatoes and Broccolini

Heat oil in a large skillet over medium-high. Add sausage and cook, stirring occasionally, until lightly browned, about 2 minutes. Add tomatoes, garlic, and thyme, stir to combine, and cook, pressing down on some of the tomatoes with the back of a wooden spoon to encourage bursting, 2 minutes. Add broccolini; season with salt and pepper. Cook, covered, 2 minutes. Remove from heat and stir in butter until melted.

Divide sausage mixture among plates. Serve with bread alongside, if desired.
