This caraway chicken with sweet-and-sour red cabbage is a sophisticated yet simple dish that brings warmth and depth to your midweek dinner repertoire. The aromatic caraway and allspice provide an earthy contrast to the tangy balsamic glaze, while a small amount of smoky bacon adds a savoury richness without weighing the dish down. It is a vibrant, colourful meal that looks beautiful on the plate and feels remarkably indulgent despite its healthy profile.
As a diabetes-friendly main course, this recipe focuses on lean protein and fibre-rich vegetables to provide a balanced and satisfying meal. Perfectly portioned for two, the dish relies on fresh ingredients and clever seasoning rather than heavy fats to deliver bold flavours. Serve this homemade favourite on its own for a light supper or with a few steamed new potatoes.

Sprinkle caraway and 1/4 teaspoons allspice on both sides of chicken breasts. Sprinkle with salt and pepper.
Heat oil in large nonstick skillet over medium heat. Add bacon; cook until crisp. Transfer to plate. Add chicken to drippings in skillet; sauté until cooked through, about 5 minutes per side. Transfer to plate; tent with foil. Add cabbage, shallots, broth, vinegar, sugar, and 1/4 teaspoons allspice to same skillet; cook over medium-high heat until liquid is reduced to glaze and cabbage is crisp-tender, 6 minutes.
