Chicken Salad with Piquillo Peppers, Almonds, and Spicy Greens

This vibrant chicken salad with piquillo peppers and toasted almonds is a sophisticated twist on a classic lunchtime staple. By using reserved roasting juices and a sharp red wine vinegar dressing, the dish achieves a deep, savoury flavour without the need for heavy sauces. The combination of sweet peppers and crunchy nuts provides a wonderful contrast to the tender chicken, making it a refreshing choice for a light summer meal.

As a diabetes-friendly recipe, this salad is naturally high in protein and healthy fats while remaining low in carbohydrates. The use of spicy greens like watercress and rocket adds a peppery bite that complements the fresh basil perfectly. Serve this versatile dish as a standalone main or as part of a healthy weekend spread for family and friends.
