Monte Cristo Chicken

This elegant Monte Cristo chicken dish transforms simple poultry into a sophisticated dinner using classic French-inspired flavours. By searing the chicken breasts before finishing them in the oven, you achieve a moist, tender result paired with a light, velvety sauce made from white wine, lemon, and herbes de Provence. It is a wonderful way to enjoy a restaurant-quality meal at home while keeping the preparation straightforward and the ingredients fresh.

As a diabetes-friendly main course, this recipe focuses on lean protein and a controlled, savoury sauce rather than heavy starches. The addition of fresh garlic and shallots provides a deep aromatic base without the need for excess salt. Serve this dish over a bed of steamed spinach or wilted greens for a nutritious, low-carbohydrate meal that feels truly indulgent.
