Ingredients for Chilli-Rubbed Prawns with Avocado Corn Cocktail

  • 16 jumbo prawns (about 675g), peeled and deveined

  • 1 tablespoon ancho chilli powder

  • 1 1/2 teaspoons garlic salt

  • 1 teaspoon ground coriander

  • 1 teaspoon dried oregano

  • 1/2 teaspoons ground cumin

  • 1/2 teaspoons freshly ground black pepper

  • 2 tablespoons extra-virgin olive oil

How to make Chilli-Rubbed Prawns with Avocado Corn Cocktail

  1. Rinse the prawns under cold running water, then blot them dry with paper towels.

  2. Place the chilli powder, garlic salt, coriander, oregano, cumin, and pepper in a mixing bowl and whisk to mix. Add the prawns and toss to coat. Stir in the olive oil. Let the prawns marinate in the refrigerator, covered, for 30 minutes to 1 hour.
