These elegant sea scallop brochettes offer a sophisticated start to any dinner party, combining the natural sweetness of fresh seafood with the aromatic warmth of saffron. This heart-healthy recipe focuses on lean protein and unsaturated fats, replacing traditional heavy sauces with a Bright, citrus-infused aïoli. The combination of charred scallops and fragrant bay leaves creates a wonderful depth of flavour that feels indulgent yet light.
Perfect as a refined starter or a light summer main, this dish is as visually striking as it is delicious. The orange segments and fresh chives provide a burst of colour and acidity that cuts through the rich, golden aïoli. You can prepare the skewers and the sauce in advance, leaving you only a few minutes of searing at the hob before serving.
