This roast pork sandwich with sweet peppers and rocket is a sophisticated way to transform leftover roasting joints into a gourmet meal. By pairing thinly sliced, succulent pork with the brightness of pickled peppers and a punchy homemade garlic mayo, you create a lunch that is far superior to any shop-bought alternative. The combination of textures—from the crusty baguette to the tender meat and crisp red onions—makes every bite satisfying and full of flavour.
As a high-protein option, this recipe is ideal for those looking for a substantial, energy-boosting meal that doesn't compromise on taste. The addition of fresh thyme and lemon juice to the mayonnaise provides a zesty lift that cuts through the richness of the pork. Serve it as a weekend treat or a hearty weekday lunch, perhaps alongside a simple green salad for a lighter touch.
