This vibrant vegan side dish transforms simple broccolini into a sophisticated accompaniment using the classic Spanish flavours of smoked paprika and sherry vinegar. The contrast between the tender, slightly charred stems and the crunchy, golden toasted almonds creates a wonderful texture that elevates any evening meal. Using pimentón dulce adds a deep, savoury warmth without overwhelming the delicate flavour of the brassicas.
Perfect for a quick midweek dinner or as part of a weekend spread, this pan-seared broccolini is both healthy and packed with plant-based protein from the nuts. It pairs beautifully with roasted root vegetables or grilled proteins, offering a bright acidity that cuts through richer dishes. This simple method ensures the greens remain crisp and colourful while soaking up the aromatic garlic oil.
