Caponata with Fennel, Olives, and Raisins

This vibrant aubergine caponata with fennel, olives, and raisins is a beautiful celebration of Sicilian flavours. The combination of salty Kalamata olives and sweet golden raisins creates a sophisticated agrodolce profile that perfectly balances the earthy aubergine and aromatic fennel. It is a wonderfully fragrant dish that develops a deeper, more complex character if left to sit for a few hours before serving.

As a naturally vegan recipe, this versatile vegetable stew makes an excellent addition to a summer mezze platter or as a substantial side dish for a weekend lunch. It is particularly delicious when served at room temperature alongside some toasted sourdough or used as a topping for bruschetta. This healthy, homemade classic is also ideal for meal prep, as it keeps beautifully in the fridge.

Heat oil in heavy large pot over medium-high heat. Add aubergine, peppers, fennel, and garlic; sauté until aubergine is tender, about 10 minutes. Add olives and raisins, then mix in tomato sauce and vinegar. Cover, reduce heat to medium-low, and simmer 15 minutes, stirring occasionally. Uncover and simmer until caponata is thick and vegetables are tender, stirring occasionally, about 15 minutes longer. Mix in basil. Season caponata to taste with salt and pepper.
