Ingredients for Crispy sheet-pan broccoli
1,350 g broccoli, trimmed, cut into florets with some stalk attached (cut the florets in half if large)
120 ml olive oil
kosher salt
freshly ground black pepper
How to make Crispy sheet-pan broccoli
Set the oven racks in the upper and lower thirds of the oven and preheat to 220°C.
Line two large rimmed baking trays with baking parchment.
Divide the broccoli evenly between the trays, arranging them in a single layer.
Drizzle each tray of broccoli with 60 ml of oil, then season with ½ teaspoon of salt and a few grinds of black pepper.
Roast for 35–40 minutes, stirring once and rotating the trays halfway through, until the broccoli is crispy and charred in places.
Taste and adjust the seasoning if desired.
