This classic Italian bread salad, often known as panzanella, is a vibrant celebration of simple, high-quality ingredients. By toasting cubes of crusty country bread until crisp, they act as the perfect vehicle to soak up the juices from the fresh cucumber and the zingy red-wine vinegar dressing. Brimming with fragrant flat-leaf parsley and torn basil, this salad offers an aromatic freshness that balances the salty punch of Kalamata olives and capers.
As a naturally vegan dish, it makes for a substantial lunch or a sophisticated side for a summer gathering. The secret lies in letting the salad sit for half an hour before serving, allowing the bread to soften slightly while retaining a satisfying chew. It is a wonderful way to use up slightly stale bread and is rich in heart-healthy fats from the extra-virgin olive oil.
