This classic vegetarian migas recipe is a vibrant and satisfying way to start the day. A staple of Tex-Mex cuisine, this dish transforms simple store-cupboard staples like tortilla crisps and eggs into a textured, savoury breakfast. The combination of softened onions, juicy tomatoes, and a kick of jalapeño provides a fresh contrast to the salty crunch of the tortillas, making it a wonderful alternative to a standard scramble.
Ideal for a quick weekend brunch or a protein-packed midweek meal, these migas are incredibly versatile. You can easily adjust the heat by adding more chilli or serve them alongside sliced avocado and a dollop of soured cream for extra indulgence. It is a brilliant budget-friendly option that brings bold, sunny flavours to your kitchen table in less than fifteen minutes.
Ingredients for Amaya’s Migas
1 tablespoon vegetable oil
475ml dime-sized tortilla pieces or crushed tortilla crisps
80g chopped tomato
110g chopped onion
1 jalapeño chilli, stemmed, seeded, and chopped
2 eggs
60g cheddar cheese
How to make Amaya’s Migas
Heat the oil in a large skillet over medium heat and sauté the tortilla pieces or chips until slightly crisp, 1 to 2 minutes. Add the tomato, onion, and chilli and cook for 5 minutes. Pour in the eggs and mix with a spatula, scraping up the eggs as they cook. When the eggs are partially set, add the cheddar. Cover. Toss a few more times until the cheese melts.
