This vibrant vegetarian dish celebrates the classic Mediterranean combination of sweet oven-roasted tomatoes, smoky piquillo peppers, and creamy goat’s cheese. By gently sautéing the shallots and garlic before finishing under the grill, you create a rich, savoury base that perfectly complements the tangy, bubbling cheese. It is a wonderfully simple yet sophisticated recipe that works beautifully as a light lunch or a communal starter for a dinner party.
Quick to prepare and bursting with fresh colour, this warm bake is best enjoyed straight from the oven. Serve it in the centre of the table with plenty of crusty baguette slices or artisan crackers to scoop up the softened cheese and sweet juices. For a nutritious boost, you could also serve it alongside a crisp green salad tossed in a sharp lemon vinaigrette.
