Basil Caesar Salad

This vibrant basil Caesar salad offers a refreshing and aromatic twist on the classic Italian-American staple. By infusing a traditional Caesar dressing with a generous amount of fresh basil and flat-leaf parsley, the dish takes on a bright green hue and a peppery depth that pairs perfectly with crisp romaine hearts. The homemade croutons, toasted until golden in the oven, provide a satisfying crunch that elevates this recipe from a simple side to a standout vegetarian starter.

Ideal for a light summer lunch or as an elegant accompaniment to grilled proteins, this salad is as nutritious as it is flavourful. The inclusion of Parmigiano-Reggiano adds a sophisticated savoury note, while the citrusy lemon juice cuts through the richness of the olive oil. Serve it immediately while the croutons are still warm for the best possible texture and flavour experience.
