This homemade toasted nut and date granola offers an exceptional crunch and depth of flavour that shop-bought varieties simply cannot match. By roasting the pecans and almonds before mixing, you draw out their natural oils, creating a fragrant base for the golden, butter-glazed oats. The addition of sesame seeds provides a subtle nuttiness, while the maple syrup ensures a gentle sweetness that isn't cloying, making it a sophisticated choice for a morning meal.
As a versatile vegetarian breakfast option, this granola is perfect for batch cooking and keeping in an airtight container for busy weekdays. Serve a generous handful over thick Greek yoghurt with fresh berries, or enjoy it in a bowl with chilled milk. Packed with fibre and wholesome fats, it is a satisfying way to start the day or a great energy-boosting snack for the afternoon.

Ingredients for Extreme Granola
110g pecans
45g natural almonds
350g old-fashioned rolled oats
25g sesame seeds (optional)
1 stick (8 tablespoons ) unsalted butter
80ml pure maple syrup, cane syrup or honey, at room temperature
1/4 teaspoons fine salt
110g chopped dates
80g dried blueberries or raisins
How to make Extreme Granola
Preheat the oven to 191°C. Line a large shallow baking sheet with foil. Spread the pecans and almonds on the sheet and roast for 8 to 10 minutes, until lightly toasted. Transfer the nuts to a board, let cool and chop the nuts. Set aside.
Reduce the oven temperature to 149°C. Pour the oats and sesame seeds, if using, in a mound on the same baking sheet. Melt the butter in a small bowl in the microwave; stir in the maple syrup and salt and drizzle on top of the oats. Stir well with a rubber spatula and then spread out the oats in an even layer.
Bake the oats for 30 minutes, stirring once with the spatula halfway through, until the oats are lightly coloured. Let cool; the mixture will crisp as it cools. Add the dates, blueberries, and reserved nuts and toss.
