Farmers Market Salad with Aged Gouda and Roasted Portabellas

This vibrant market salad with roasted portobellos and aged Gouda is a sophisticated vegetarian dish that celebrates bold, earthy flavours. The star of the show is the roasted mushrooms, which develop a rich, meaty texture that contrasts beautifully with the sharp, peppery notes of a mixed leaf base containing rocket, mustard greens, and watercress. A punchy Dijon vinaigrette ties everything together, cutting through the richness of the cheese.

Ideal for a light lunch or as an elegant starter for a dinner party, this homemade salad is both healthy and incredibly satisfying. The use of aged Gouda provides a wonderful nutty saltiness that complements the roasted elements perfectly. For the best results, use the freshest seasonal greens available from your local green grocer to ensure a crisp and peppery finish.
