Garlic Confit Toast

This garlic confit toast brings a sophisticated depth of flavour to a classic vegetarian side dish. By slowly simmering whole garlic cloves in unsalted butter, the harshness of the raw garlic transforms into a mellow, sweet, and spreadable paste. When combined with the salty tang of Parmesan, fresh oregano, and a hint of lemon zest, it creates a rich topping that far surpasses any shop-bought alternative.

Ideal for serving alongside pasta dishes, hearty soups, or as a standalone appetiser, this recipe is a versatile addition to your cooking repertoire. Using the grill ensures a perfectly crisp baguette with a molten, bubbling cheese finish. It is a simple yet indulgent way to make the most of larder staples while providing a boost of comforting, homemade flavour to your mid-week meals or weekend gatherings.

Ingredients for Garlic Confit Toast

  • 1 head garlic

  • 110g (1 stick) unsalted butter

  • 230g grated Parmesan

  • 2 teaspoons chopped oregano

  • 1 teaspoon grated lemon zest

  • 1/2 teaspoons crushed red pepper flakes

  • 1 baguette sliced in half lengthwise, then crosswise

Cook cloves from 1 head garlic in 120ml (1 stick) unsalted butter in a small covered saucepan over medium-low heat until golden brown and very soft, 15–20 minutes. Transfer to a medium bowl; let cool.

Add 150g grated Parmesan, 2 teaspoons chopped oregano, 1 teaspoon grated lemon zest, and 1/2 teaspoons crushed red pepper flakes to garlic and mash to a paste; season with salt.

Heat grill. Slice a baguette in half lengthwise, then crosswise. Grill, cut side down, on a foil-lined baking sheet until golden brown, about 2 minutes (watch carefully). Let cool slightly, then spread cut side with garlic paste. Grill until cheese is golden and bubbling, about 2 minutes. Slice.
