These grilled chive potatoes offer a delightful twist on a classic barbecue side dish. By parboiling the red-skinned potatoes before hitting the grill, you ensure a fluffy, tender interior that contrasts beautifully with the crisp, charred edges. The addition of fresh chives and a hint of lemon zest provides a bright, herbaceous lift to the rich butter, making this a standout accompaniment to any al fresco meal.
Primarily a vegetarian dish, these potatoes are incredibly versatile and pair perfectly with roasted vegetables or grilled halloumi. Because they can be boiled and flattened in advance, they are an excellent choice for stress-free entertaining. Simply finish them over the coals just before serving to achieve that signature smoky flavour and satisfying golden crunch.
