How to make Loaded halloumi flatbreads
Prepare the crunchy salad: Mix all the salad ingredients together in a bowl.
Make the dressing: Heat the oil in a small frying pan over a low heat. Add the chilli and ginger, and cook for 2 minutes. Stir in the seeds and cook for a further 1–2 minutes until fragrant.
Combine the dressing: Transfer the yoghurt to a clean bowl and stir in the chilli, ginger, and seed mixture. Season to taste.
Dress the salad: Gently toss the salad in the dressing until well combined.
Cook the halloumi: Dry-fry the halloumi in a non-stick frying pan over a medium heat for 2–3 minutes on each side until golden brown and crispy on the outside, and softened inside. Remove and drain on kitchen paper.
Warm the flatbreads: Heat the flatbreads on a griddle pan or in a low oven. Spread each flatbread with hummus.
Assemble the dish: Top the hummus with the halloumi and crunchy salad, and dot with harissa.
Serve immediately: Enjoy your delicious creation while fresh!
