By incorporating crisp, salty bacon and a touch of Dijon mustard, the filling gains a rich depth of flavour that pairs perfectly with the creamy yolk. This high-protein snack is naturally low in carbohydrates, making it an excellent choice for those looking for diabetes-friendly recipes that do not compromise on taste. The addition of fresh spring onions provides a bright, savoury finish that cuts through the richness of the mayonnaise.
Perfect for a weekend brunch, a summer picnic, or as a nutritious snack to keep in the fridge, these eggs are incredibly versatile. They can be prepared in advance, allowing the flavours to develop before serving. For the best results, use free-range eggs and high-quality smoked bacon to ensure every bite is packed with texture.
