Baked Eggs with Coconut Milk and Coriander

These baked eggs with coconut milk and coriander offer a sophisticated twist on a breakfast classic. By gently poaching the eggs in creamy coconut milk, the whites become incredibly tender while the yolks remain beautifully rich. The addition of fresh lime juice and a dash of green hot sauce provides a zesty, vibrant contrast to the mellow coconut, making this a refreshing way to start your morning.

As a diabetes-friendly option, this dish is naturally low in carbohydrates and high in quality protein, helping to maintain steady energy levels throughout the day. It is perfect for a quick weekday brunch or a relaxed weekend breakfast. Serve these elegant ramekins on their own or with a side of steamed greens for a light, wholesome, and thoroughly satisfying homemade meal.
