This vibrant crunchy crab salad is a sophisticated yet simple dish that celebrates fresh, coastal flavours. By combining sweet hand-picked crabmeat with the sharp tang of pink grapefruit and the crisp texture of Granny Smith apples and radishes, it creates a beautifully balanced plate. The addition of fresh ginger and toasted coriander seeds provides a subtle warmth that elevates the seafood without overpowering its delicate natural sweetness.
As a diabetes-friendly option, this recipe focuses on high-quality proteins and heart-healthy fats from the avocado and extra virgin olive oil. It is an excellent choice for a light summer lunch or an impressive starter for a dinner party. Serve it exactly as it is to appreciate the interplay of textures, or alongside a few crisp rye crackers for a satisfying, nutrient-dense meal that feels truly indulgent.
