Farfalle with Chicken, Tomatoes, Caramelized Onions, and Goat Cheese

This vibrant chicken and goat’s cheese farfalle is a sophisticated take on a high-protein pasta dinner. By combining the natural sweetness of slowly caramelised red onions with juicy heirloom tomatoes and fresh herbs, the dish achieves a depth of flavour that perfectly complements the lean shredded chicken. The addition of fresh marjoram and basil brings a fragrant Mediterranean touch to the sauce, while a base of iron-rich baby spinach adds a fresh, crisp texture to every bite.

Ideal for those seeking a nutritious yet comforting midweek meal, this recipe makes excellent use of shop-bought rotisserie chicken for a quicker preparation time. The tangy goat's cheese melts slightly over the warm pasta, creating a creamy finish without the need for a heavy sauce. Serve this balanced dish on its own for a satisfying lunch or dinner that feels both wholesome and indulgent.
