Parmesan-Crusted Chicken and Asparagus with Sauce Maltaise

This elegant Parmesan-crusted chicken and asparagus dish offers a sophisticated twist on a classic crumbed poultry favourite. The golden, savoury crust of the chicken is perfectly balanced by the bright, citrusy notes of the sauce maltaise—a traditional hollandaise variation infused with blood orange juice. It is a vibrant, textured meal that feels indulgent while remaining light enough for a midweek spring dinner when local asparagus is at its best.

As a high-protein option, this recipe is ideal for those seeking a nutritious yet flavourful meal that does not compromise on style. The addition of peppery watercress provides a fresh, crisp garnish that complements the rich Parmesan coating. Serve this dish at your next dinner party or as a refined family meal for a boost of quality protein and seasonal greens.
