Peach-Lacquered Chicken Wings

These peach-lacquered chicken wings offer a sophisticated twist on a classic high-protein snack, balancing sweet fruit preserves with the savoury depth of soy sauce and fresh ginger. The glaze caramelises beautifully under the grill, creating a sticky, golden finish that is far superior to any shop-bought alternative. Using peach or apricot jam provides a glossy sheen and a subtle sweetness that perfectly complements the succulent chicken.

Ideal for hosting or as a substantial weekend treat, this dish is impressively simple to prepare using a food processor and a single baking tray. The addition of red pepper flakes brings a gentle heat that cuts through the richness of the glaze. Serve these wings alongside a crisp green salad or some crunchy slaw for a balanced, high-protein meal that the whole family will enjoy.

Ingredients for Peach-Lacquered Chicken Wings

  • 3 garlic cloves

  • 1 (3-inch) piece peeled ginger, coarsely chopped

  • 160ml peach or apricot preserves or jam

  • 80ml soy sauce

  • 2 tablespoons water

  • 1/4 teaspoons hot red-pepper flakes

  • 1.8kg chicken wings, tips removed if desired

How to make Peach-Lacquered Chicken Wings

Preheat grill.

With motor running, drop garlic into a food processor and finely chop. Add ginger and finely chop.

Add preserves, soy sauce, water, and red-pepper flakes and pulse until sauce is combined.

Line bottom and sides of a large 4-sided sheet pan with foil and lightly oil foil.

Pat wings dry and put in sheet pan. Season with 3/4 teaspoons salt. Pour sauce over wings and toss to coat, then spread in 1 layer.

Grill wings 4 to 6 inches from heat 5 minutes, then turn over and baste with sauce from pan. Continue to grill, rotating pan and turning and basting 3 more times, until chicken is cooked through and browned in spots, 20 to 25 minutes.
