This wild rice dressing with apples and chestnuts is a sophisticated, high-protein dish that brings together the earthy flavours of autumn. The nutty texture of the wild rice provides a wonderful base for the savoury Italian sausage and the sweet, sharp bite of Granny Smith apples. Incorporating shop-bought chestnuts adds a buttery richness that complements the fresh parsley and aromatic thyme, making it a truly fragrant side dish or a substantial main course.
Ideal for those seeking a nutritious and filling meal, this recipe is naturally high in protein and can be partially prepared a day in advance to save time. Whether you are serving it alongside a roast chicken for a Sunday lunch or enjoying it as a wholesome midweek supper, the combination of textures and seasonal ingredients makes it a comforting homemade favourite that is as healthy as it is delicious.
