This vibrant almond pad thai with shirataki noodles offers a lighter, grain-free twist on the classic takeaway favourite. By swapping traditional rice noodles for shirataki noodles, this dish remains remarkably low in calories while absorbing all the rich, savoury notes of the almond and coconut amino dressing. The combination of crisp broccoli, sweet red peppers and shredded carrots provides a wonderful variety of textures and a boost of essential vitamins.
As a versatile vegan plant-based meal, this recipe is perfect for a quick midweek dinner or a nutritious packed lunch. The use of almond butter adds a sophisticated depth of flavour and a dose of healthy fats, making it a satisfying alternative to peanut-based sauces. Serve it warm, topped with fresh spring onions and toasted sesame seeds for a simple yet professional finish.
