Harissa-and-Maple-Roasted Carrots

This vibrant vegan side dish brings a sophisticated edge to the humble root vegetable. These harissa and maple roasted carrots combine the smoky heat of North African spices with the mellow sweetness of pure maple syrup. Using rainbow carrots adds a beautiful range of colours to the table, while the addition of sliced lemon provides a zesty brightness that cuts through the rich, caramelised glaze.

Ideal for a Sunday roast or as part of a Mediterranean-inspired feast, this recipe is naturally plant-based and gluten-free. The carrots can be prepared up to six hours in advance and served at room temperature, making them a stress-free option for entertaining. Pair them with creamy tahini dressing or a scatter of fresh coriander for a colourful, nutritious addition to any meal.
