One-a-Day Baguette

This classic homemade baguette is a wonderful introduction to the rewarding world of bread making. This vegan recipe uses a simple combination of plain flour, yeast, and water to create a loaf with a beautifully crisp, golden-brown crust and a light, airy texture. The process of kneading and proofing the dough by hand ensures a traditional finish that shop-bought varieties simply cannot match, filling your kitchen with the comforting aroma of fresh baking.

Perfect for a weekend lunch or as an accompaniment to a savoury soup, this versatile loaf is best enjoyed slightly warm from the oven. Because the method is straightforward and requires no specialist equipment, it is an ideal bake for beginners looking to master a reliable white bread. Serve your fresh baguette with a drizzle of olive oil or your favourite plant-based spread for a truly delicious homemade treat.

Ingredients for One-a-Day Baguette

  • 1 teaspoon active dry yeast

  • 1 teaspoon sugar

  • 350ml warm water (41°C to 46°C)

  • 950 to 1075ml unbleached plain flour

  • 2 1/2 teaspoons salt

How to make One-a-Day Baguette

In a large bowl sprinkle yeast and sugar over warm water and let stand until foamy, about 5 minutes. With a wooden spoon stir in 250g flour until combined. Stir in salt and 250g remaining flour until mixture forms a stiff dough. On a lightly floured surface knead dough with lightly floured hands 8 minutes, or until smooth and elastic, kneading in enough of remaining 60g flour to keep dough from sticking. Transfer dough to a lightly oiled deep bowl, turning to coat with oil, and let rise, bowl covered with plastic wrap, until doubled in bulk, about 1 1/2 hours.

Preheat oven to 204°C.

Punch down dough and form into a long slender loaf about 21 inches long and 3 inches wide. Put loaf diagonally on a lightly greased large or 17- by 14-inch baking sheet and let rise, uncovered, about 30 minutes. (Baguette may be made up to this point 4 hours ahead and chilled.)

Make 3 or 4 diagonal slashes on loaf with a sharp knife and lightly brush top with cool water. Bake loaf in middle of oven 30 minutes, or until golden, and transfer to a rack to cool.
