Raw Butternut Squash Ribbon Salad with Orange and Chilli

This raw butternut squash ribbon salad with orange and chilli offers a refreshing alternative to traditional roasted vegetable dishes. By shaving the squash into delicate ribbons and marinating them in a bright citrus dressing, the natural sweetness of the vegetable is beautifully balanced by a subtle heat and zesty finish. The acidity of the orange and white wine vinegar works to soften the squash, creating a texture that is tender yet retains a satisfying bite.

As a vibrant vegan side dish, this salad is an excellent choice for a light lunch or as a colourful accompaniment to a larger spread. The addition of toasted pumpkin seeds provides a lovely crunch and a boost of plant-based protein, making it as nutritious as it is flavourful. Serve this fresh, seasonal salad at your next gathering for a simple but sophisticated starter.
