This roasted apple and tomatillo salsa offers a refreshing twist on a classic Mexican condiment. By roasting tart Granny Smith apples alongside vibrant tomatillos, white onion, and garlic, the natural sugars caramelise to create a sophisticated balance of sweetness and acidity. The addition of a single jalapeño provides a gentle, warming heat that complements the zesty green fruit, resulting in a versatile vegan dip that feels both familiar and contemporary.
Ideal as a zingy accompaniment to grilled vegetables, tacos, or simple maize chips, this vibrant green salsa is a healthy, homemade alternative to shop-bought varieties. The recipe concludes with a stir-through of fresh, finely diced apple, which adds a delightful textural crunch to the smooth, smoky base. It is a fantastic choice for seasonal entertaining or adding a burst of flavour to a midweek plant-based meal.
