This roasted garlic chilli sauce is a vibrant, versatile condiment that brings a delightful balance of heat and sweetness to your table. By roasting the red peppers and chillies alongside a whole head of garlic, the flavours mellow and intensify, creating a rich base that far surpasses shop-bought alternatives. The additions of rice vinegar and a touch of honey provide a bright acidity and subtle glaze that makes this sauce truly addictive.
As a naturally vegan-friendly dressing or dip, this recipe is a fantastic way to elevate simple grilled vegetables, tofu, or grains. It is remarkably easy to prepare and can be made up to five days in advance, making it a brilliant staple for your weekly meal prep. Serve it as a bold dipping sauce or drizzle it over a crisp winter salad for an instant flavour boost.

1 head of garlic, halved crosswise
2 small shallots, peeled
2 tablespoons vegetable oil
Kosher salt
60ml (or more) unseasoned rice vinegar
1 1/2 teaspoons honey
How to make Roasted Garlic Chilli Sauce
Preheat oven to 218°C. Toss pepper, chillies, garlic, shallots, and oil on a rimmed baking sheet to coat; season with salt. Turn garlic cut side down and roast until pepper and chillies are softened and blistered in spots, 10–15 minutes. Let cool.

Sauce can be made 5 days ahead. Cover and chill.
