Tofu Stir Fry

This vibrant tofu stir-fry is a fantastic way to enjoy a balanced vegan meal that doesn't compromise on flavour. By pressing the tofu and dusting it in flour before frying, you achieve a wonderfully golden exterior that contrasts beautifully with the tender whole-wheat noodles. The sauce, a zesty blend of white miso and fresh orange, provides a savoury depth that ties the crisp peppers and baby corn together for a satisfying, colourful dish.

Perfect for a quick midweek dinner, this recipe is packed with plant-based protein and iron-rich ginger. The addition of water chestnuts adds a delightful crunch, making it a texturally exciting meal for both vegans and those simply looking to reduce their meat intake. Serve it piping hot for a nutritious homemade alternative to a takeaway.
