Broccoli-Pecorino Gratinata

This broccoli and pecorino gratinata is a sophisticated yet simple vegetarian side dish that celebrates the earthy flavours of seasonal brassicas. By slicing the blanched broccoli into flat pieces and layering them closely, you create a wonderful texture that catches the melted butter and sharp, salty Pecorino Romano cheese. The addition of dried red pepper flakes provides a subtle heat that perfectly balances the richness of the cheese, making it a versatile accompaniment to almost any main course.

Ideal for entertaining, this savoury vegetable gratin can be prepared up to eight hours in advance and kept in the fridge until you are ready to roast. High-temperature baking ensures the cheese forms a golden crust while the broccoli tips become deliciously charred and crisp. Serve this alongside a Sunday roast or as a light supper for a nutritious, flavour-packed addition to your table.
