Butternut Squash Polenta

This creamy butternut squash polenta is a wonderfully comforting vegetarian dish that celebrates the earthy, sweet flavours of autumn. It is an ideal alternative to mashed potatoes or pasta when you are looking for something slightly more sophisticated yet deeply satisfying.

Quick to prepare using instant polenta, this recipe makes a versatile base for a variety of meals. Serve it as a soft, savoury bed for roasted Mediterranean vegetables, or enjoy it as a standalone main topped with a handful of toasted pine nuts and a drizzle of sage butter. It is a nutritious, gluten-free option that provides a gentle hit of Vitamin A and slow-release energy.
