This savoury chickpea pizza, inspired by the traditional Mediterranean farinata or socca, is a brilliant vegetarian option for those seeking a gluten-free alternative to dough. Made with earthy chickpea flour and scented with fresh rosemary, this dish offers a unique texture that is crisp on the outside and tender in the middle. The addition of sharp Parmesan cheese creates a golden, lacy crust under the grill, providing a satisfyingly salty finish that pairs beautifully with the nutty base.
Quick to prepare and incredibly versatile, this recipe works perfectly as a light lunch served alongside a crisp green salad or sliced into wedges for a sophisticated snack. Because the batter relies on simple store-cupboard staples, it is an excellent choice for a nutritious midweek meal. For the best results, ensure your frying pan is thoroughly heated before adding the batter to achieve that signature scorched, authentic flavour.

170g chickpea flour*
1/2 teaspoons (generous) salt
475ml water, divided
1 teaspoon minced fresh rosemary
Nonstick vegetable oil spray
90ml extra-virgin olive oil, divided
6 tablespoons finely grated Parmesan cheese, divided
1/2 teaspoons freshly ground black pepper, divided
How to make Chickpea Pizza
Sift chickpea flour and salt into large bowl. Gradually add 160ml water, whisking until smooth. Whisk in 325ml water and rosemary. Let stand 30 minutes.
Preheat grill. Spray large nonstick grill proof skillet with nonstick spray. Add 1 tablespoon oil; heat over medium-high heat. Whisk batter. Pour half of batter into skillet; drizzle with 2 tablespoons oil. Cook until top is almost set, piercing bubbles with knife, about 4 minutes. Sprinkle with 3 tablespoons cheese and 1/4 teaspoons pepper.
Grill pizza until golden, 4 to 5 minutes. Slide onto platter. Repeat to make another pizza. Cut into wedges; serve hot or warm.
