This elegant grilled striped bass recipe combines the delicate, sweet flavour of fresh fish with a sophisticated citrus and saffron-infused butter. The saffron adds a luxurious golden hue and subtle earthy notes, which perfectly complement the zesty orange concentrate. By marinating the fish with fresh orange slices and juice before cooking, you ensure the flesh remains moist and aromatic, whether you choose to use farm-raised bass or fresh rainbow trout.
As a dairy-free alternative can easily be used, this versatile seafood dish is ideal for a light summer lunch or an impressive dinner party main course. Preparing the flavoured butter in advance makes this a stress-free option for entertaining outdoors. Serve alongside some crushed new potatoes and charred tenderstem broccoli for a complete, nutritious meal that is as healthy as it is delicious.

Whisk butter, juice concentrate, vinegar, and saffron in small saucepan to blend. Season butter to taste with coarse salt and pepper. DO AHEAD Can be made 2 days ahead. Cover and chill.
Using small sharp knife, cut diagonal slits on both sides of fish at 1-inch intervals. Arrange fish on rimmed baking sheet. Sprinkle fresh orange juice and salt into slits and cavities of fish. Fill cavities with orange slices (about 3 per fish). Cover loosely and let stand at room temperature at least 30 minutes and up to 1 hour.
