Roast Chicken with Dried Fruit and Almonds

This aromatic roast chicken with dried fruit and almonds is a spectacular dairy-free main course that brings together sweet and savoury notes. The slow-cooked onions and plump prunes, dates, and apricots create a rich, jammy base that beautifully complements the golden, turmeric-rubbed chicken. It is a fantastic choice for a celebratory Sunday lunch or a festive dinner party when you want a dish that feels abundant and sophisticated.

Preparing the fruit and onion base in advance makes this a remarkably easy dish to assemble on the day. For the best results, ensure the chickens are well-rested before carving to keep the meat succulent and tender. This wholesome meal is naturally filling and pairs wonderfully with fluffy couscous or simple roasted root vegetables, making it a versatile addition to your homemade repertoire.
