Ingredients for Cashew horchata (horchata de nuez de la India)

  • 130 g cashews

  • 185 g brown rice

  • ½ stick Mexican cinnamon

  • 60 g shaved piloncillo or brown sugar, plus more to taste

  • 950 ml water

How to make Cashew horchata (horchata de nuez de la India)

  1. Combine the cashews, rice, cinnamon stick, 4 tablespoons of sugar, and water in a deep container. Cover and refrigerate for at least 8 hours or overnight.

  2. Transfer all the ingredients to a blender and blend until smooth.

  3. Strain the mixture through a fine-mesh sieve, discarding the solids.

  4. If desired, add more sugar to taste.
