Pepper-Grilled Steak with Chopped Summer Salad

This pepper-grilled steak with chopped summer salad is a vibrant, nutrient-dense meal that celebrates fresh, seasonal produce. The robust flavour of the black pepper and garlic rub perfectly complements the rich, savoury beef, while the topping provides a bright, acidic contrast. By using a lean cut of top sirloin and a generous amount of fresh vegetables, this dish offers a satisfyingly high-protein option that remains light and balanced enough for any day of the week.

Designed as a diabetes-friendly main course, this recipe replaces heavy sauces with a Mediterranean-inspired salad of ripe tomatoes, peppery rocket, salty feta and kalamata olives. The addition of a jalapeño chilli provides a subtle heat that stimulates the palate without the need for excess sugar or carbohydrates. It is an excellent choice for a healthy mid-week dinner or a sophisticated alfresco lunch during the warmer months.
