This vibrant Asian steak and mushroom salad offers a sophisticated balance of textures and deep savoury flavours. Using tender rib-eye steaks crusted with toasted sesame seeds, the dish provides a satisfying crunch that contrasts beautifully with the earthy, sautéed mushrooms. The dressing, infused with fresh ginger, coriander, and a hint of chilli-garlic sauce, brings a bright acidity that cuts through the richness of the beef, making it an ideal choice for a light yet filling evening meal.
As a diabetes-friendly recipe, this dish focuses on high-quality proteins and nutrient-rich mixed greens while remaining naturally low in carbohydrates. Using sesame oil adds a nutty aroma without the need for heavy sauces, ensuring the meal stays heart-healthy and light. Serve it as a quick midweek dinner or a healthy weekend lunch when you want something that feels truly indulgent yet remains nutritionally balanced.
