Coriander Scallops with Orange-Ginger Dressing

These pan-seared coriander scallops with orange-ginger dressing offer a sophisticated start to any meal or a light, elegant lunch. The dish relies on the vibrant contrast between the earthy, toasted flavour of crushed coriander seeds and the bright acidity of citrus. By searing the scallops quickly over a high heat, you achieve a beautifully spiced crust while maintaining a delicate, tender texture inside.

As a heart-healthy choice, this recipe uses extra-virgin olive oil and fresh aromatics like ginger to provide depth without the need for heavy sauces. The addition of fresh orange segments and mixed baby greens creates a colourful, nutrient-rich base that complements the seafood perfectly. It is a simple yet impressive way to serve sustainably sourced scallops to friends and family.

How to make Coriander Scallops with Orange-Ginger Dressing

Place crushed coriander seeds on plate. Sprinkle scallops with salt and pepper, then press both sides in coriander to coat. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add scallops and cook until golden brown and just opaque in centre, 1 1/2 to 2 minutes per side.
