Pan con Tomate' y Anchoa—Garlic, Olive Oil, and Fresh Tomato on Toasted Bread

This classic pan con tomate with anchovies is a celebration of simple, high-quality Mediterranean ingredients. As a heart-healthy starter or light lunch, it relies on the natural sweetness of ripe plum tomatoes balanced by the punch of fresh garlic and fruity extra virgin olive oil. The addition of salty anchovy fillets provides a sophisticated savoury depth that cuts through the fresh tomato pulp beautifully.

Perfect for summer entertaining or a quick evening snack, this dish is traditionally served as part of a tapas spread. Using a rustic loaf ensures the bread stays crisp under the topping, providing a wonderful textural contrast. It is an excellent way to enjoy the cardiovascular benefits of healthy fats and lycopene-rich tomatoes in one delicious, homemade bite.

How to make Pan con Tomate' y Anchoa—Garlic, Olive Oil, and Fresh Tomato on Toasted Bread

With a coarse grater held over a bowl grate the tomatoes down to the skin. Pour off any excess liquid. Add the garlic, olive oil, and salt to taste (the mixture should be well seasoned). Let sit for a few minutes to meld flavours.

Lightly toast the split bread and drizzle with olive oil. Pour the tomato mixture into a serving bowl and arrange the bread and anchovies, if using, on plates. Let each guest spread the tomato mixture on the bread and top it off with one or two anchovy fillets.
