This elegant foie gras with Bing cherries and mâche offers a sophisticated balance of rich, savoury flavours and bright, seasonal fruit. The buttery texture of the duck liver finds a perfect partner in the tart sweetness of the cherries, while the delicate mâche leaves provide a fresh, peppery contrast. Finished with a sharp balsamic reduction, it is a refined dish that celebrates classic French-style combinations with a contemporary touch.
As a high-protein starter, this dish is an excellent choice for a formal dinner party or a special celebratory meal. The toasts and glaze can be prepared well in advance, allowing you to assemble the salad and plate up with ease. Serve this alongside a chilled dessert wine to truly enhance the indulgent qualities of the foie gras.
