This fragrant jasmine rice with peanuts and spring onions is a simple yet sophisticated side dish that brings a wonderful texture to any meal. By simmering the rice in a combination of water and savoury chicken broth, the grains absorb a deeper depth of flavour that perfectly complements the aromatic jasmine scent. It is a versatile accompaniment that works beautifully alongside grilled meats or spiced stir-fry dishes.
As a high-protein vegetarian-friendly base, this dish relies on the crunch of salted roasted peanuts and the brightness of fresh spring onion greens to provide a satisfying finish. Whether you are looking for a quick midweek addition to your dinner rotation or a reliable recipe for entertaining, this seasoned rice offers a wholesome and healthy alternative to plain boiled grains.

240ml reduced-sodium chicken broth
