These vibrant sweet pea canapés offer a sophisticated yet simple way to start any dinner party or seasonal gathering. The recipe features a velvety pea mousse, enriched with Parmigiano-Reggiano and double cream, served on crisp, golden baguette toasts. By sieving the pea purée, you achieve a professional, silky texture that contrasts beautifully with the salty finish of thinly sliced baked ham.
As a high-protein snack or starter, these elegant bites are as nutritious as they are visually appealing. The bright green hue of the baby peas makes them a particularly lovely choice for spring entertaining or festive drinks parties. You can prepare the mousse and toasts in advance, simply assembling them just before your guests arrive to ensure the bread stays perfectly crunchy.

Ingredients for Sweet-Pea Canapes
1 (275g) box frozen baby peas (550ml )
60ml water
120ml chilled double cream
1/4 teaspoons salt
1/8 teaspoons black pepper
1 tablespoon finely grated Parmigiano-Reggiano
1/2 baguette
110g very thinly sliced baked ham
How to make Sweet-Pea Canapes
Put oven rack in middle position and preheat oven to 191°C.
Simmer peas with water in a 1 1/2- to 2-quart saucepan, covered, until tender, about 5 minutes. Purée peas with water in a food processor (do not use a blender) until very smooth. Force purée through a fine-mesh sieve into a bowl, discarding solids, then chill until cold. Beat cream with salt and pepper in another bowl until it holds stiff peaks, then fold in pea purée and cheese until just combined. Chill pea mousse, covered, while making toasts.
Cut 24 very thin slices from baguette, then halve slices. Toast slices in 1 layer on a baking sheet in oven until edges are golden, 7 to 9 minutes. Cool toasts completely on a rack.
Spoon a dollop of mousse onto each toast, then top with a small piece of ham (torn from a slice). Serve immediately.
