Ingredients for Garlic–brown butter croutons
170 g country-style bread, torn into 2.5 cm irregular pieces (about 480 g)
10 garlic cloves, smashed
60 g unsalted butter, softened
kosher salt
freshly ground pepper
How to make Garlic–brown butter croutons
Preheat the oven to 190°C (fan) or 200°C (conventional).
Place the bread in a large bowl.
Heat the garlic and butter in a medium saucepan over medium-low heat, swirling often, until the foaming subsides, the butter turns golden brown, and the garlic is fragrant, about 6–8 minutes.
Drizzle the garlic butter over the bread and toss to coat. Season with salt and pepper.
Spread the bread mixture out on a small rimmed baking tray.
Bake the croutons until they are deep golden brown and crisp, about 20–25 minutes.
Allow the croutons to cool, then remove and discard the garlic cloves.
Do Ahead: Croutons can be made up to 1 week in advance. Store them in an airtight container at room temperature.
