Ingredients for Aguas frescas (Mexican fruit coolers)

  • 100 g caster sugar

  • 960 ml water

  • 480 g chopped fruit (watermelon, cantaloupe, pineapple, papaya, strawberries, oranges, peaches, mangoes, or any combination)

  • ice cubes

  • lemon or lime wedges (optional)

How to make Aguas frescas (Mexican fruit coolers)

  1. Stir the sugar and water together in a large jug until the sugar dissolves.  

  2. Measure out 240 ml of the sugar water.  

  3. Purée the fruit and the measured sugar water in a blender until smooth.  

  4. Pour the mixture through a fine-mesh sieve back into the jug, mashing with a whisk or wooden spoon to eliminate any pulp.  

  5. Taste and add more sugar if desired.  

  6. Serve over ice, garnished with a lemon or lime wedge if preferred.
