Ingredients for Spicy carrot-miso dressing
2 medium carrots, chopped (if using a high-powered blender), grated (if using a regular blender)
120 ml filtered water
35 g raw cashews
60 ml extra-virgin olive oil
45 ml freshly squeezed lime juice
1 spring onion, white and light green parts only, coarsely chopped
1 slice (1.25 cm) of a large garlic clove
2.5 g fine sea salt, plus more to taste
5 ml tamari, plus more to taste
1 recipe creamy carrot dressing, omitting the salt and using brown rice vinegar in place of the lime juice
15 g unpasteurized chickpea miso or sweet white miso
2.5 cm piece fresh ginger, peeled, chopped (finely chopped if using a regular blender)
0.5 g cayenne pepper, plus more to taste
How to make Spicy carrot-miso dressing
Combine the carrots, water, cashews, olive oil, lime juice, scallion, garlic, salt, and tamari in an upright blender. Blend for at least 1 minute until completely smooth.
Scrape down the sides of the blender with a rubber spatula and blend again.
Taste and adjust the seasoning as needed, then blend once more.
Use the dressing immediately, or store it in a glass jar in the fridge for up to 3 days. Shake well before using. The dressing will thicken in the fridge; if needed, thin it out with a little water.
To make the dressing, follow the instructions for the base recipe, adding the miso, ginger, and cayenne to the blender along with the other ingredients.
Adjust the seasoning with additional cayenne and salt to taste.
