Ingredients for Buttermilk waffles
360 g plain flour
15 ml baking powder
5 ml baking soda
5 ml salt
780 ml buttermilk, well shaken
170 g unsalted butter, melted and cooled
3 large eggs, lightly beaten
vegetable oil, for brushing waffle iron (if necessary)
butter, for accompaniment
pure maple syrup, for accompaniment
a well-seasoned or nonstick Belgian or standard waffle iron
How to make Buttermilk waffles
Preheat the waffle iron.
Position a rack in the middle of the oven and preheat it to 95°C.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the buttermilk, melted butter, and eggs to the dry ingredients, then stir until smooth. The batter will be thick.
If necessary, lightly brush the waffle iron with vegetable oil.
Spoon 125 ml of batter into the waffle iron for each 10 cm square Belgian waffle, or 60 ml for each standard waffle, spreading the batter evenly.
Cook according to the manufacturer's instructions until golden.
Transfer the cooked waffles to a baking tray and keep warm, uncovered, in the oven.
Repeat with the remaining batter to make more waffles.
Serve the waffles warm with butter and maple syrup.
